  • Lesson 1: Meet Sachiko Windbiel


    Meet Sachiko Windbiel and learn about the tools you’ll need, the techniques you’ll master, and the cake toppers you’ll create.

  • Lesson 2: Sculpting Heads, Facial Features, Feet & Hands


    Review the basics of working with fondant and learn the particulars of molding fondant into cake toppers. Learn how to create different facial expressions and features for your fondant heads; how to make eyeballs out of gum paste; and how to create realistic-looking hands and feet. Discover the secret to coloring fondant in the exact shades you want.

  • Lesson 3: Giraffe Topper


    Watch as Sachiko creates a sweet giraffe topper, one of her most popular miniatures. With adorable crossed legs and eyes full of expression, it’s perfect for a child’s birthday cake.

  • Lesson 4: Monkey Topper


    Work along with Sachiko as she makes a little fondant monkey, a great topper for perfecting your hand and feet skills. Learn how to fashion every adorable detail, right down to his tiny banana and a colorful plate for him to rest on.

  • Lesson 5: Elephant Topper


    Now that you’ve gotten your feet wet with the giraffe and monkey, create a whole family of stacked elephants under Sachiko’s guidance, including a flower-patterned plate for them to lie on.

  • Lesson 6: Little Red Riding Hood Topper


    Use the skills you’ve learned so far to tackle the super-detailed Little Red Riding Hood, a topper little girls just love. In addition to making Red (and her Mary Jane shoes, adorable long braid with a bow, and dress with a cape and bow) you’ll learn how to make a bunny, a squirrel, a tree stump, and flowers.

  • Lesson 7: Wedding Couple


    You’re ready for the classic cake topper — a bride and groom! In making the happy couple, you’ll learn how to make lots of details that can be applied to other people toppers, including a skirt, bowtie, buttons, ruffles, suit jacket, hair curls, lace-patterned veil, rings, and a bouquet.

Meet the Instructor

Sachiko Windbiel Instructor of Cute Cake & Cupcake Toppers

Cake and cupcake designer Sachiko Windbiel, originally from Japan, relocated to New York City in 2008 to attend a culinary school specializing in vegetarian cooking and healthful food preparation techniques. Upon graduating, Sachiko began working at a wedding and specialty cake company, where she quickly realized that pastry was her destiny. In 2010 she launched mimicafe Union, where she creates custom-made edible fondant toppers for cakes, cupcakes, cookies, and cake pops; she also leads classes in how to create them. Her specialty is 3D cake toppers; Sachiko says she loves the challenge of figuring out how to translate a photo or idea into a fondant figure. Sachiko has won many cake competitions, including first place at the 2014 National Capital Area Cake Show in the Wedding Cake division; first prize at the 2013 That Takes the Cake show for her cupcakes and toppers; and first place in the Best Anniversary Theme Cake category at the 2013 National Capital Area Cake Show. Her work has appeared in numerous magazines, including Cake Masters and American Cake Decoration. Sachiko’s motto is "Live a happy life and cherish your sweet memories."   • Are the cake toppers food safe?

    Yes! They are made out of fondant and gum paste which are not only food safe, but edible.

  • Is sculpting experience necessary?

    Not at all. Sachiko demonstrates her techniques in such a way that even someone who has never worked with fondant will be able to follow along. Plus, you’ll learn how to customize details — like the wedding couple’s facial features — so you can make the figures your own.

  • Do I need a lot of special tools?

    Absolutely not. In fact, Sachiko says her fingers are her most valuable tool! She’ll show you how she uses every part of her hand to sculpt her toppers and to carve out the minuscule details that make them so extraordinary.
